And I think it’s time for one more.

Key Lime Pie is a serious weakness of mine.

If I see it on a menu, it’s hard to say no.

Seriously… I have no will power when it comes to this flavored pie.

Ingredients:

  • 1 box Pillsbury Key Lime cake mix
  • 1 stick (1/2 cup) plus 3 Tablespoons butter – room temperature
  • 3 eggs
  • 3 cups powdered sugar
  • 2 teaspoons lime juice
  • 8 oz. cream cheese
  • 1-2 drops green food coloring
  • Garnish- whipped topping and maraschino cherries

Directions for Key Lime Bars:

Step 1:  Preheat oven to 350°.

Step 2:  Spray a 9 X 13 pan with non stick coating spray. Set aside.

Step 3: In a medium mixing bowl, add the cake mix, stick of butter and one egg.

Make sure the butter is softened or the mix will be lumpy.

Mix until well incorporated.

Step 4: Press the cake batter mixture into the 9 X 13 pan. This will be the crust for the pie bars.

Step 5: In a medium mixing bowl, add the powdered sugar and 3 Tablespoons of butter.

With an electric mixer on medium speed, add the lime juice and beat for one minute.

Step 6: Add the cream cheese and food coloring and beat on medium speed for an additional minute.

Step 7: Scoop out 1 cup of the icing to a small bowl and set aside.

Step 8: Add 2 eggs to the remaining icing and beat on medium speed until light and fluffy.

Step 9: Pour on top of the crust and bake for 28-30 minutes.

Step 10: Allow bars to cool for 30 minutes before spreading the reserved cup of icing on top.

Step 11: Cut into squares and serve with whipped cream and a cherry (optional).
