Mexican Corn Recipe

I can still remember the first time I had Mexican Corn.

It was at a Wisconsin State Fair.

We were wandering around between the cheese curds (a true Wisconsin delicacy) and the grilled sausage dishes.

There was a popular booth offering up some kind of corn dish.

Feeling adventurous, we decided to try something new and ordered up a piece of corn for me and my husband.

Oh my goodness! The taste explosion was awesome!

Today, I’m excited to share this Mexican corn recipe with you… it will change how you think about corn.

And be sure to try some of these inventive spreads for corn to use all summer long.

Ingredients:

  • 4 ears fresh Sunshine Sweet Corn, husked
  • 1/4 cup mayonnaise
  • 4 ounces Cotija or feta cheese
  • 1 teaspoon chili powder
  • 4 lime slices

Mexican Corn Recipe Directions:

Step 1: Preheat grill or broiler.

Step 2: Grill or broil corn, turning occasionally until hot and some kernels turn golden brown, about 5 minutes.

Step 3: Using a knife, coat each ear of corn with about 1 tablespoon of mayonnaise.

Step 4: Crumble cheese on one side of each corn ear.

Step 5: Sprinkle with chili powder, dividing evenly.

Step 6: Broil until cheese starts to melt, approximately 1 to 2 minutes.

Step 7: Serve with lime. (Personally, I like LOTS of lime.)
