Or maybe my taste buds are ready for to wake up and enjoy some zing now that there are finally leaves on the trees again.

Lemon Cookies Recipe

What you’ll need:

  • 1 standard cookie sheet
  • Parchment paper
  • Zester
  • Lemon Squeezer
  • 2 medium-sized bowls
  • Hand mixer
Lemon Cookie Ingredients

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 1 large egg
  • 1.2 tsp vanilla
  • 2 tbsp lemon juice (approximately half of a medium-sized lemon) and the rind of two lemons

Steps:

Step 1: Preheat oven to 350 degrees and line cookie sheet with parchment paper. Set aside.

Make sure your butter is at room temperature.

Step 2: In one of your medium-sized bowls, mix together flour, baking powder and salt. Set aside.

Step 3: In your second medium-sized bowl, cream butter, sugar, egg, and vanilla together.

Mixing

Step 4: Take your bowl of dry ingredients and in thirds, slowly add into butter-sugar mixture.

Fold and mix until ingredients take the consistency of cookie dough.

Step 5: Squeeze your lemons to get the 2 tbsp of lemon juice. I use a lemon squeezer.

Lemon Zest

Step 6: Grate the rinds of 2 lemons using a zester.

Step 7: Add in your lemon juice and half of your lemon rind to the mixture.

Step 8: Roll cookie dough into 1-inch balls and place on lined cookie sheet.

Step 9: Bake for 12 to 14 minutes.

Buttercream frosting - READY FOR LEMON COOKIES cooling

Step 10: Once cool, top each cookie with buttercream frosting and sprinkle remaining lemon zest on top.
